- 4 ounces feta cheese
- 1/2 cup pecans
- 1/4 cup dried cranberries
- 3 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions:
- Heat a dry skillet over medium heat. Add pecans and toast, stirring frequently, until fragrant and lightly browned (about 3-5 minutes). Let cool slightly.
- In a small bowl or jar, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.
- In a large mixing bowl, combine the mixed greens, diced apples, crumbled feta cheese, toasted pecans, and dried cranberries.
