Ingredients:

  • 4 cups mixed greens
  • 2 medium Honeycrisp apples
  • 4 ounces feta cheese
  • 1/2 cup pecans
  • 1/4 cup dried cranberries
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions:

  1. Heat a dry skillet over medium heat. Add pecans and toast, stirring frequently, until fragrant and lightly browned (about 3-5 minutes). Let cool slightly.
  2. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.
  3. In a large mixing bowl, combine the mixed greens, diced apples, crumbled feta cheese, toasted pecans, and dried cranberries.
  4. Pour the maple-dijon vinaigrette over the salad and toss gently to coat. Serve immediately.
