Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.5 cup (45g) old fashioned rolled oats
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 2 tsp ground cinnamon
  • 0.5 tsp sea salt
  • 1 cup (245g) plain Greek yogurt
  • 0.5 cup (120ml) pure maple syrup
  • 1 large egg, room temperature
  • 0.25 cup (60ml) melted coconut oil
  • 1 tbsp vanilla extract
  • 1.5 cups diced fresh apples

Instructions:

  1. Preheat your oven to 400°F (200°C). Prepare a 12-cup muffin tin with paper liners or non-stick spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, and sea salt until evenly distributed.
  3. In a separate bowl, vigorously whisk the Greek yogurt, maple syrup, egg, melted coconut oil, and vanilla extract until the mixture is smooth and pale. The acidity of the Greek yogurt will react with the baking soda in the dry ingredients, creating air bubbles for a lighter muffin.
  4. Pour the wet ingredients into the dry ingredients. Use a silicone spatula to gently fold the mixture just until the white streaks of flour disappear. Do not over-mix, as this can lead to dense muffins.
  5. Gently fold the diced apples into the batter. Divide the batter evenly among the 12 muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
