Ingredients:

  • 6 chicken drumsticks (approx. 2 lbs)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 2 large eggs
  • 2 tbsp water

Instructions:

  1. Pat the 6 chicken drumsticks completely dry with paper towels. In a medium bowl, toss the drumsticks with 1 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper until evenly coated.
  2. Prepare the breading station. In the first bowl, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tbsp garlic powder, 1 tbsp paprika, 1 tsp onion powder, and 1/2 tsp cayenne pepper. In a second bowl, beat 2 large eggs with 2 tbsp water.
  3. Coat each drumstick by dipping it first into the flour mixture, then into the egg wash, and finally back into the flour mixture. Press the flour in firmly with your hands to ensure a thick coat.
  4. Preheat the air fryer to 380°F (193°C).
  5. Arrange the breaded chicken in the air fryer basket in a single layer, ensuring the pieces do not touch to allow proper air circulation. Cook in batches if they don't fit in one layer.
  6. Spray the tops of the chicken generously with oil spray. Cook for 11 minutes.
  7. Flip the chicken legs using tongs, spray the other side with oil, and cook for another 11 minutes until the skin is deep golden brown and the internal temperature reaches 165°F (74°C).
