Ingredients:

  • 2 medium apples, peeled, cored, and diced (about 2 cups) - (Approx. 300g)
  • 2 tablespoons granulated sugar (30ml)
  • 1 tablespoon all-purpose flour (15ml)
  • 1 teaspoon ground cinnamon (5ml)
  • 1 tablespoon unsalted butter, melted (15ml)
  • 1 tablespoon lemon juice (15ml)
  • 1 (14.1 ounce) package refrigerated pie crusts (2 sheets) - (Approx. 400g)
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon milk or water (15 ml)
  • Optional: Coarse sugar, for sprinkling

Instructions:

  1. Prepare the Filling: In a medium bowl, combine diced apples, sugar, flour, cinnamon, melted butter, and lemon juice. Stir until well combined. Let sit for 5 minutes.
  2. Prepare the Dough: Unroll pie crusts on a lightly floured surface. Use a rolling pin to lightly flatten the crusts.
  3. Cut the Dough: Cut out circles from the pie crusts using a 3-4 inch cookie cutter or bowl. You should get about 6 circles from two crusts.
  4. Assemble the Hand Pies: Place a spoonful of apple filling in the center of half of the pastry circles.
  5. Seal the Edges: Brush the edges of the pastry circles with the egg wash. Place a plain pastry circle on top of each filled circle. Use a fork to crimp and seal the edges tightly. Pierce the top of each pie with a fork to allow steam to escape.
  6. Egg Wash & Sugar: Brush the tops of the hand pies with the remaining egg wash. Sprinkle with coarse sugar, if desired.
  7. Air Fry: Preheat your air fryer to 350°F (175°C). Place the air fryer hand pies in the air fryer basket, being careful not to overcrowd (you may need to work in batches).
  8. Cook: Air fry for 12-15 minutes, or until the crust is golden brown and the filling is bubbly and heated through.
  9. Cool: Let cool slightly on a wire rack before serving.
