Ingredients:
- 1 pint (450g) fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 8 pre-made shortcake biscuits, halved
- 8 oz (225g) whipped topping
- 1 teaspoon vanilla extract (optional)
Instructions:
- In a large bowl, gently combine the sliced strawberries and granulated sugar. Let sit for at least 5 minutes, or up to 30 minutes.
- If using homemade whipped cream, prepare that while the strawberries are macerating. If using store-bought, move on.
- Halve the shortcake biscuits. If they're a bit dry, you can lightly brush them with milk or a bit of melted butter.
- For each bite, place a dollop of whipped topping on one half of a shortcake biscuit. Top with a spoonful of the macerated strawberries and a sprinkle of strawberry juice. Add the vanilla extract to whipped cream. Place the other half of the biscuit on top, creating a little sandwich.
- Arrange the strawberry shortcake bites on a serving platter and serve immediately. Alternatively, you can chill them for up to an hour.
